What is Kombucha?

Kombucha is a fermented drink made from tea, sugar and a culture known as a, S.C.O.B.Y (Symbiotic Colony of Bacteria and Yeast). The culture is primarily cellulose and produced by the bacteria. During ferment: sugar, alcohol and pH go down and beneficial acids go up. The role of the yeast is to convert the sugar into alcohol for the bacteria to feed upon. The tea that is used to feed the S.C.O.B.Y contributes tannins, nitrogen and caffeine that both the yeasts and the bacteria thrive off of to create the fermented tea drink known as, kombucha.

Kombucha Benefits:
